(adapted from “Oh She Glows”)
Mix dry ingredients together in bowl:
-2 1/2 c. rolled oats
-1 c. raw almonds, roughly chopped
-1/2 c. raw walnuts, roughly chopped
-1/2 c. raw sunflower seeds
-1/3 c. raw pumpkin seeds
-1/3 c. golden raisins
-1/3 c. cranberries
-2 tbs. ground flax
-2 tbs. coconut flakes
-1 tsp. cinnamon
-pinch of nutmeg
-pinch of salt
Add wet ingredients into small sauce pan over medium heat, bring to a boil, then simmer for 10 minutes on low, stirring throughout.
-4 tbsp. organic brown rice syrup
-1 tbsp. agave nectar
-1 tbsp. coconut oil
-2 tbsp. applesauce
-2 tbsp. peanut butter
-1/3 c. brown sugar or coconut palm sugar
Stir wet and dry mixture together. Spread onto cookie sheet lined with parchment paper. Bake 45 min. Stir granola every 15 min. Cool on pan for 25 min. Then break up granola and store it in an air tight container. A mason jar works great for storing it as well!
